Lemon Pepper Chicken Bites
· 3 Boneless, skinless chicken breasts
· Italian flavored breadcrumbs
· Panko
· Lemon pepper seasoning
· 3 Eggs
· Avocado Oil
· Milk
Trim fat from the breast including the thin line of grizzle/fat between the tender and the breast, cut the breasts up into ¾ to 1-inch cubes
Mix milk and eggs in a single shallow bowl, basically a mixture like you would use for scrambled eggs
Mix 1/3 breadcrumbs, 1/3 Panko, 1/3 Lemon Pepper (depending on taste) together into a shallow bowl
Put the chicken into the egg batter let it soak in the and then moved to the bread crumb mixture
Move the chicken over to the breadcrumb bowl and cover the chicken with the breadcrumb mixture.
Personally, I use 2 forks one for the egg mixture and one for breadcrumbs, once the chicken is covered in the breadcrumb bowl, I grab the chicken by hand and make sure it is fully breaded.
Once all the chicken is breaded, I add about ¾ of an inch to two frying pans (for speed) and wait until the oil is hot and fry them.
Place the bites onto a drying rack, not jumbled together as they come out. The idea is to let them dry and drip the excess oil off.
