Welsch Rabbit

Ingredients:

  • ½ inch of Butter or Margarine

  • 2 heaping tablespoons of Flour

  • ¼ teaspoon Dry Mustard

  • ½ cup of Milk

  • ½ cup of stale Beer

  • 2 Eggs

  • 1 large Velveeta Cheese (2.5 to 3lb) cut up into very small cubes to make the soup

In a double broiler melt the Butter, Flour and Mustard until smooth.

Add the milk and beer and stir together

Add the two beaten eggs in and stir together (eggs must be beaten ahead of time)

Add the Velveeta cheese and cook until a little heavy

Served on Toast Bread
